– Place the podded and washed beans in unsalted boiling water.
– Blanch for 2 minutes from the moment the water returns to a boil.
– Immediately transfer to ice-cold water to halt cooking.
– Drain on an absorbent cloth, pat dry with another, and let air-dry for a few hours in the fridge on a tray.
– Pack into freezer bags and store in the freezer.
