Easy Peanut-Free Chocolate-Dipped Vanilla Wafer Cookies Recipe

Ingredients

  • Vanilla wafers
  • 1 cup creamy sunflower seed spread, at room temperature
  • 3/4 cup powdered sugar
  • Peanut-free chocolate candy coating
  • 1 teaspoon vanilla extract

Yield: 2 dozen cookies

Instructions

  1. In a bowl, combine the sunflower seed spread, powdered sugar, and vanilla extract to form a smooth filling. Line a baking sheet with parchment paper. Spread a heaping tablespoon of the mixture evenly onto each vanilla wafer. Arrange the topped wafers on the prepared tray.
  2. In a microwave-safe bowl, melt the peanut-free chocolate candy coating in 15-second intervals, stirring between each. Using a fork, dip each topped wafer into the melted chocolate until fully coated, then return to the tray.
  3. Let the cookies cool completely until the chocolate hardens.
