Cabri with Espelette Pepper

'Under a thin layer of Espelette pepper reveals a melting and homogeneous white paste. Goat aromas emerge with ripening. Made in La Chapelle-Saint-Laurent by Fromagerie Couturier, using milk from just 160 goats in pure local tradition.'

Traditional Tomme Cheese

'This tomme features a slightly orange paste under a natural gray crust. Its creamy, unctuous texture offers sweet notes. This Berry cheesemaker imports Dutch Gouda and refines it locally—unique cow's milk tommes in a goat cheese region.'

Pardou d’Estive

'A sheep's cheese from the Hautes Vallées d'Ossau. Pyrenees wildflowers impart delicate flavors. Shepherd Stéphane, with 20+ years experience, grazes at 2000m altitude, hand-makes, and matures in a stone tunnel in the Sousséou Valley.'

Séchon

'A small cow's milk cheese with dry texture, akin to Saint-Marcelin but longer-aged for bolder taste. Post-WWII, Jules Gerentes started a family business collecting local Yssingelais farm milk for market cheeses.'

Florinut

'Deep brown rind, sometimes with white down. Supple, lightly salted paste with nutty aromas. Refined in 5-year-aged walnut liqueur from Brive-la-Gaillarde's Distillerie Denoix.'
