1. Plant beets in a spot with full sun exposure—at least 10 hours daily.
2. Aim for soil pH between 6.0 and 7.0 for optimal growth.
3. Before planting, remove stones to prevent root deformities and mix in compost.
4. Prepare furrows 30-40 cm apart. Sow seeds 30-45 cm apart, covering with 1 cm of soil.
5. Maintain consistent soil moisture during root development for plump, fleshy beets.
6. Soak seeds in lukewarm water for a few hours to soften husks and accelerate germination.
7. Beet seeds are clusters of 2-3. Thin seedlings at 3-4 leaves: keep the strongest and transplant others.
8. Protect against leaf miners, flea beetles, and leafhoppers with row covers until harvest.
9. Harvest leaves at 3-5 cm for salads. Pull roots at golf-ball size (4-5 cm)—younger ones taste best.
10. For storage, trim leaves to 3-5 cm stems and refrigerate in freezer bags.
Beets pair well with kohlrabi, bush beans, lettuce, and onions. See our plant companion guide for more.
Don't overlook the leaves—they're the most nutritious part! Use young beet greens in salads or smoothies.
Late varieties store for months if fully mature.
Post-harvest: Air-dry roots away from rain, trim tops, and store in sand-filled boxes like carrots or turnips.
Note: Beet consumption may tint urine or stools pink to red—harmless and normal!
Eat raw (grated in salads), boiled, steamed, or roasted. Try as appetizers with potatoes and lamb's lettuce, or braised in beer with onions.
Beets come in red, yellow, pink, white, and striped. Our favorites:
Crapaudine: Heirloom late variety with long, rough roots and superior flavor.
Black Egypt: Early, flat red roots with tender flesh.
Burpee's Golden: Sweet, golden-yellow round roots.
