Harvest linden flowers when they fully open and remain white, always including the bract—the small leaf at the base of the flower stalk. This peak bloom coincides with heavy bee activity, including honeybees and bumblebees, creating the lime tree's iconic buzz. Stings are extremely rare, as insects focus intently on the nectar rather than your hands. Just handle gently to avoid accidentally crushing a bee between fingers.
If the tree's hum causes concern, forage early in the morning when bees are less active. Spread the flowers (not the bees!) in a shaded, airy spot to dry for several days, then store in airtight tin boxes. (A personal favorite: repurposed biscuit tins.)
