Yield: 8 servings
Ingredients:
1 ball of room temperature pizza dough (store-bought or homemade)
olive oil, for brushing
4 ounces herbed goat cheese
2 teaspoons honey, divided
1 firm pear, cored and thinly sliced
6 dried apricots
1/4 cup fresh mint, chopped
salt and pepper
1/4 cup toasted walnuts (optional)
Instructions:
- Place a pizza stone or cookie sheet in the bottom of the oven and preheat to 500 degrees F. Allow the stone to heat thoroughly.
- Cover the apricots with boiling water and let sit for 10 minutes to plump and reconstitute.
- On a lightly floured surface, roll out the pizza dough to a 6" x 12" rectangle. Brush with olive oil and carefully transfer to the hot pizza stone. Bake for 5 minutes until the dough begins to puff up.
- Meanwhile, beat the goat cheese and 1 teaspoon honey in a small bowl until fluffy. Remove the crust from the oven and spread the cheese over it, leaving a 1-inch border.
- Arrange the sliced pears on top of the cheese. Season with salt and pepper, then bake for an additional 10 minutes, until the crust is crisp and golden.
- Remove from oven and sprinkle with drained apricots, mint, and toasted walnuts if desired. Let rest for 5 minutes before cutting into squares.
