This elegant recipe looks gourmet but comes together effortlessly and delivers incredible flavor. Yields 18-20 triangles.
Ingredients
1 sheet ready-to-use puff pastry
1 large can diced tomatoes
goat cheese crumbles
bacon
Provencal herbs
fresh arugula
olive oil
salt and pepper to taste
Let the puff pastry rest at room temperature for 20 minutes. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
Cut the puff pastry into even squares, then into triangles; arrange on the parchment. Alternatively, bake full sheets and cut into triangles after baking.
In a skillet, cook the bacon just before it crisps.
Top each triangle (or the full sheet) with a tablespoon of diced tomatoes, bacon, goat cheese crumbles, and herbs. Season with salt and pepper, then drizzle with olive oil.
Bake for about 10 minutes, until the pastry is puffed and golden. Garnish with fresh arugula and enjoy warm.
