How to make goat cheese, tomato and bacon triangles

This recipe looks fancy and complex, but it's super easy to make and super delicious to eat. Makes 18 to 20 triangles.

The ingredients

1 sheet of puff pastry ready to use
1 large can of diced tomatoes
goat cheese crumbles
bacon
Provencal herbs
fresh arugula
olive oil
salt and pepper to taste

Let the puff pastry rest at room temperature for 20 minutes. Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper.
Cut the puff pastry into even squares, then divide them into triangles; put on parchment paper. You can also bake the dough sheets into squares and then cut them into triangles after baking.

In a skillet, cook the bacon just before it crisps up.

Place a tablespoon of diced tomato on each triangle or line the entire pastry sheet with tomatoes. Add the bacon, goat cheese, and herbs, then season with salt and pepper. Drizzle olive oil on top.

Bake for about 10 minutes or until the dough is well puffed and golden. Garnish with a few arugula leaves and enjoy.

(You can add bacon roasts to it after baking cakes.)
