This vibrant Moroccan-inspired side dish features fluffy pearl couscous paired with sweet currants, crunchy pistachios, and fresh parsley. It's a quick, flavorful addition to any meal, drawing from traditional North African flavors I've refined through years of home cooking.
Ingredients
- 2 cups Israeli couscous (pearl couscous)
- 2½ cups chicken broth
- ½ cup chopped pistachios
- ½ cup chopped parsley
- ¼ cup currants
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Bring the chicken broth to a boil in a medium saucepan. Add the couscous and simmer until tender, 5 to 10 minutes.
