Before countertop installation, instruct your installer to handle drop-offs carefully. If needed, trim the butcher block edges to remove saw marks and nicks. Once shaped, smooth the perimeter with an orbital sander, targeting only knife marks and high spots without reshaping the piece.

Secure the butcher block to a workbench with padded clamps. Using a 3/8-inch twist drill bit, slowly drill around the perimeter on the top and bottom edges.
Determine the top side, then on the bottom, mark a 4- to 6-inch wide area centered on each shorter edge. Starting at the mark's center, use a 1/2-inch drill bit to remove material for handles.
Smooth any burnt or burnished spots with sandpaper.

Smooth the wood grain with steel wool, rubbing the entire board in circular motions. Apply butcher block oil liberally with a clean cotton towel, following label instructions. Once dry, it's ready to use!
